Here are some of my easy recipes for your fresh homemade tofu and your precious okara:

Quick smoked tofu
Marinated tofu in minutes

Ingredients:
Tofu 200/250g, olive oil 1tbsp.
For the marinade: Soy sauce 2tbs, water 1tbsp, hickory smoke powder 1/4tsp.
Serves 2-3 

Prepare the marinade mixing soy sauce, water and hickory smoke powder. Slice the tofu, lay it in a hot pan with little oil. Add the marinade on both sides. Cook for a few minutes until golden brown. Enjoy!

Easy scrambled tofu
A tasty egg-less alternative to prepare in minutes

Ingredients:
Tofu 200/250g, 2 small peppers, 1 small onion, turmeric 1/2 tsp, soy sauce to taste, olive oil 1 spoon.
Serves 2-3

In a hot pan with a little olive ,saute your chopped onion and peppers for a few minutes. Add your  scrambled tofu, 1/2 tsp turmeric, a good dash of soy sauce and stir fry for a few minutes.

Tofu Caprese
With your great fresh tofu you can afford to keep it simple

Ingredients:
Freshly made Tofu 250g, 2 beef tomatoes, fresh spinach, olive oil, salt, pepper.
Serves 2-3

Slice your fresh tofu and tomatoes. Lay on a bed of fresh spinach (or you can opt for the traditional basil leaves if you prefer). Season with olive oil, salt and pepper.

Tofu with italian herbs
Your fresh homemade tofu with a mediterranean twist

Ingredients:
Soy curd freshly made, dried Italian herbs mix.​
Prepare the soy curd from soybeans following the instructions here.
Drain the soy curd and mix in the herbs.
​Transfer it into your tofu box and press for 30 minutes.      Enjoy!

Tofu kebabs with bbq sauce
You don’t need a special occasion for this every-day feast

Ingredients:
Tofu 200/250g, 15/20 baby peppers,  15/20 brussels sprouts, cherry tomatoes, olive oil. 
For the sauce: Ketchup 1/2 cup, hickory smoke powder 1/4 tsp, a pinch cayenne pepper (optional).
Serves 2-3

Bake the diced tofu, peppers and brussels sprouts in the oven (gas mark 7) until golden brown (about 15 min). Prepare the kebabs (adding the cherry tomatoes). Prepare the bbq sauce by mixing ketchup with 1/4 tsp hickory smoke powder  and a little cayenne pepper (if you like it hot). Enjoy! 

Okara sea-burgers with tartar sauce
A fish-less alternative for your precious leftover okara

Ingredients:
Dried okara 200g, potato flakes 100g, corn flour 5tbsp, dried seaweed 30g, garlic powder 1/2tsp, soy sauce to taste, olive oil 2tbsp.
For the sauce: Mayonnaise 5tbsp, 2 pickle gherkins, capers 1tbsp, dried parsley 1tsp, lemon juice 1tbsp.
​Serves 3-4

Chop the seaweed and add the other died ingredients in a bowl. Make a mix with soy sauce and some water and form the burgers. Fry them in a little oil. Finely chop the gherkins and capers and prepare the tartar sauce mixing the remaining ingredients. Serve and enjoy!

Okara falafels with kale pesto
Not your typical falafels, not your typical pesto

Ingredients:
Okara 250g, boiled chichpeas 250g, mais starch 5tbsp, 1 small finely chopped onion, garlic powder 1/2tsp, cumin powder 1/2tsp, dried parsley 1/2tsp, olive oil 1tbsp, salt and pepper.
For the pesto: Fresh kale 30g, cashew nuts 40g, soy yogurt 4tbsp, lemon juice 1/2tbsp, salt to taste.
Serves 3-4
Squash the chickpeas and mix with all the other ingredients. Form the falafels, place them in a baking tray with a little oil and bake until golden brown (gas mark 6). Prepare the pesto by mixing all the ingredients in a food processor. Enjoy!

Okara and figs sweet loaf
A sweet treat with no added sugar

Ingredients:
Okara 200g, plain flour 150g, 2 ripe bananas, dried figs 150g, baking soda 1 tsp, coconut oil 4 tbsp.

Mix the flour, baking soda, coconut oil and okara. Add the mashed bananas and a little almond or soy milk (as required). Mix in the figs finely chopped. Pass the mixture in a greased tin and bake for about 30 minutes or until golden brown, gas mark 5. Remove the loaf from the oven, let it cool, and enjoy!

Okara biscuits choco&almonds
A classic flavour with novel ingredients

Ingredients:
Dried okara 200g, oat flakes 200g, corn flour 5tbsp, coconut butter 4tbsp, fructose or sugar 5tbsp, baking powder 1/2tsp, almonds 100g, dark chocolate 100g, almond or soy milk .            Serves 6-8

Mix all ingredients except chocolate and almonds. Add vegetal milk to form a porridge-like mixture. grossly chop almonds and chocolate and add to the mix. Form the biscuits in a baking tray with a spoon. Bake until golden brown (gas mark 6). Enjoy!
